I found this cute little container for 1.47 at Wal-Mart.
So Truffles are fairly easy, time consuming, but easy. This recipe I found was super easy! The consistency was perfect. and this recipe called for 2 dozen, with the peanut butter mixture alone I was able to make over 30!
Here is what you will need:
2 cups of Peanut Butter
1/4 cup Butter
1/2 tsp Vanilla Extract
2 cups Powdered Sugar
Red or Green Candy Melts
Christmas Sprinkles of your choice
10 oz Semi-Sweet Chocolate Chips, If you plan that 2 dozen will be plenty for you. Because I was able to make so much, I wish I would have bought a bag a little larger, if you decide to do that, pour your 10 oz and then when you run out of chocolate mix, melt a little more. That way you won’t have to waste any ingredients.
First thing to do is melt your peanut butter and butter together for 1 minute stirring every 20 seconds, at the end add your vanilla. Transfer it to a larger mixing bowl and stir in your powdered sugar. Now it’s time to roll them truffles up! onto wax paper. Roll as many as you can, each about 1/2 inch in size. When it is time to dip them into the chocolate they will get thicker so you do not have to roll large balls, just bite size. If at any time your mixture is not rolling together good just sprinkle some powder sugar and mix that part up some. I am really happy with how the consistency turned out. I never thought of using powdered sugar, I’ve always used regular.
The next step is to melt your chocolate chips, follow the directions. I used a 12 oz bag, I poured the whole thing into a bowl and then put it in the microwave for one minute, gave it a good stir then put it in for just a few seconds longer. I’ve seen recipes where they tell you to use a melon baller, I used a small measuring spoon. One tip is to use a tooth pick to dip your rolled truffles, using your measuring spoon to help cover it in chocolate and scoop off excess chocolate.
While your truffles are all covered in chocolate you can go ahead and mix your candy melts. Just melt about 6 or 7 at a time. I definitely melted way more than needed, and I had a lot of truffles. The key to drizzling the candy melts is to take a spoon and just run your spoon across all of the truffles in horizontal movements. You can’t mess up with this part, it always turns out really pretty. Second to last step are your sprinkles!!!!
The last step is to stick them in the freezer for an hour. After that just refrigerate them, you can store them in an air tight container for up to 3 days!
